Sustainbility is much more than just a buzzword in the catering and hospitality industry: it is a set of principles that shapes our values and ethics.
We are working hard with our carefully chosen main suppliers to source, when seasonality allows, as many local ingredients as possible, which helps to reduce the miles from farm to plate.
Our three main suppliers of fish, meat, fruit and vegetables are all located in the renowned Birmingham’s Wholesale Markets.
Our fruit and vegetables come from Worcester Produce, a farm situated in the Vale of Evesham that provide us with a unique and extensive range. We are confident in the quality of product, their food safety and protection of the environment ethics. We create and base our menus on seasonality, and we trust Worcester Produce to provide us with the best local ingredients where possible.
We use only British Farm Assured fresh meat, all of which meets the highest standards of food safety and hygiene, animal welfare and environmental protection. All the meat we use is fully traceable.
We exclusively use free range eggs. As well as respecting the hens’ welfare, they are far healthier and tastier. Did you know that free range eggs often contain more good omega-3 fatty acids and antioxidants than eggs from caged hens and are a rich source of vitamin E?
We aim to support the British fishing industry as much as we can. We work incredibly hard with our supplier(s) to ensure any fish we use: Does not contribute to the over-depletion of fish stocks; Is caught using methods that do not negatively impact on other species or habitats.
Farmed fish must come from a sustainable source that is well managed and regulated, as well as meet high welfare standards with regards to habitat protection.
